Overnight oats (the American name for oatmeal that you soak overnight in water or milk) have been a favorite among vegans for years. This delicious, creamy oatmeal breakfast is so  delicious that we think it’s time for everyone to enjoy healthy oat flakes.

For 1 person:

  • 45 grams of oat flakes
  • 125 ml almond milk, oat milk or milk of your choice
  • 125ml water
  • Cinnamon

Fresh from the fridge, it is a perfect breakfast for summer days. The best news? You can make this breakfast within two minutes – ahead, plus a night of soaking and you can vary it endlessly.

Step 1:
Soak the oat flakes in the evening. Here’s how: mix the oats, cinnamon, almond milk and water in a bowl. Cover and let soak overnight in the refrigerator. Also handy: make your breakfast in a glass! You can also replace the water and milk for yogurt, as shown in this video:

Step 2:
Remove the overnight oats from the fridge and stir with a spoon. Now comes the fun part: decorating your breakfast! Choose your favorite toppings and make layers with, for example, banana slices, blueberries, raisins, goji berries, a spoonful of peanut butter, almond butter and/or jam.

Make it extra tasty by finishing with a layer of grated coconut, sunflower or pumpkin seeds.
