For 1 jar of almond paste:

  • 450 grams raw, unsalted almonds

Remember: if you come across peanut butter on the ingredient list in a recipe, you can always replace it with almond paste. The taste is similar, but almond butter is slightly more subtle and softer.

We buy it at the health food store, organic supermarket or online . Almond paste is – normally – made from almonds only. You can therefore easily make almond paste yourself. Here is the recipe for almond butter.

Making almond paste

Put a desired amount of unsalted almonds (eg 450 grams for a jar) in a food processor and let the machine run. If necessary, stop the machine in between, and push the mixture back down the sides with a spatula.

The almond butter is ready when a thick and relatively smooth mixture is formed. This can certainly take 15 minutes or more! If you don’t think the consistency will ever get nice and smooth, be patient and just let the machine run. At some point you will get a smooth peanut butter texture.

Put the almond butter in a clean (glass) jar, seal and store in the refrigerator. Homemade almond butter stays good there for about 2 weeks.

Tip: you can add all kinds of seasonings at the end of the blending: for example sea salt, maple syrup, cinnamon or vanilla extract.
