Homemade celery salad

This celery salad is delicious on bread, a toast or just like that. This recipe comes from Uit Pauline’s Keuken

For 1 generous portion:

  • 1 celeriac
  • 2 apples
  • 50 grams of raisins
  • 50 grams pecan nuts
  • 1.5 tbsp mayonnaise
  • 2 tablespoons Greek yogurt
  • Juice of half a lemon
  • Pepper and salt

Peel the celeriac. I admit it is a bit of a job, because this tuber often has strange brown spots. You have to remove that.

Now you can do three things: if you’re lucky, cut the celeriac into pieces and run them through the coarse grater of the food processor. Otherwise, you can slice them into thin strips with the mandolin. Or if you don’t have either of these at home, cutting with a knife is also an option.

Place the celeriac grater or strips in a bowl. Add the mayonnaise, Greek yogurt and lemon juice. Mix the celery salad well and season with salt and pepper. Cut the apples into small pieces and add them to the salad along with the raisins and pecans.

Stir briefly and your celery salad is ready. Keep the salad covered in the refrigerator for two to three days.
