Homemade bircher muesli

This recipe for bircher muesli comes from Renée Kemps  and is made with oat flakes, almonds and fresh fruit. Delicious with a splash of milk or yogurt. 

  • 120 grams oat flakes
  • 120 ml organic apple juice
  • 1 Granny Smith apple
  • 1 teaspoon lemon juice
  • 2 tablespoons yogurt
  • 1 tablespoon raisins
  • 1 tablespoon almonds
  • 1 tablespoon linseed
  • 1 tablespoon pumpkin seeds
  • 1 fresh fig
  • 1 tablespoon honey (optional)
  • Cinnamon (optional)

Start the night before. Mix the oats, apple and lemon juice together. Grate the apple and add it to the oats along with the raisins. Stir until everything is mixed and let it soak for 8 hours to overnight.

The next day, mix the yogurt with the oatmeal. Garnish the bircher muesli with the almonds, pumpkin seeds, linseed and fresh fig. Finally, add some honey or cinnamon.
