Healthy oatmeal pancakes with honey & banana

Must Try

We received the recipe for these delicious, healthy oatmeal pancakes with honey & banana from Diane, who runs the fine food blog  Cuisine de Clementine . Recommended!

For 4-6 people:

  • 140 grams oatmeal flakes
  • 2 tablespoons honey + extra for the pancakes
  • 2 teaspoons baking powder
  • 1 egg
  • 250 ml milk
  • Coconut oil (or other vegetable oil) for frying
  • 2 ripe bananas + 1 extra sliced to serve
  • Possibly cinnamon and cottage cheese for the pancakes

Place the oatmeal flakes, honey, baking powder, egg, milk and the two bananas in a blender and blend for about 1 minute until smooth. Let the mixture sit for about 15 minutes to allow the oat flakes to expand.

Heat a frying pan to very hot and add a dash of coconut oil (if you don’t have this, a little other vegetable oil is also good). Place a scoop of the pancake batter in the pan. They are American ‘pancakes’ and must therefore be small, thick pancakes. Bake until golden brown and batter is used up.

Serve the pancakes with banana slices, extra honey, a pinch of cinnamon and a spoonful of cottage cheese.
