For 4 small portions:

  • 150 grams quinoa
  • 1 can of coconut milk
  • large bowl of oatmeal
  • 30 grams coconut shavings
  • piece or 10 walnuts
  • 4 large dates
  • bowl of blueberries
  • 2 tablespoons honey
  • 2 to 3 tablespoons ghee (clarified butter), coconut fat or nut oil
  • cup of Greek yogurt or full-fat cottage cheese
  • optional: quinoapuffs and hemp seeds

Preheat the oven to 180 degrees. Melt the ghee in a small saucepan until it is liquid. Meanwhile, put the coconut milk in another pan, add 1 to 2 cups of water and bring to the boil. Chop the dates and walnuts into pieces. When the coconut water is boiling, add the quinoa and cook according to the package directions.

Place the oats, coconut shavings, quinoapuffs and hemp seeds (if using), date and walnut pieces in a large bowl. Pour the melted ghee over this and add the honey. Mix it all together and place it on a baking tray covered with aluminum foil. Wash the berries and place them on another baking tray on baking paper.

Place both plates in the oven, the berries on the bottom. Bake the oatmeal mixture (granola) until golden brown. Stir in between so that it does not burn and not only the top layer is nicely browned. The berries are ready when they are soft, possibly split open and nice and warm.

Then drain the quinoa and rinse with cold water. Then grab a nice glass, bowl or jar. First put a layer of Greek yogurt in the dish, then a layer of quinoa, a layer of berry puree, a layer of yogurt, a layer of granola, a layer of berries, a layer of yogurt etc. Top it off with a little granola, coconut shavings and berry puree. YUMMM!
