Easy breakfast pizzas with avocado and egg

Pizza for breakfast too good to be true ? No, not as far as we’re concerned! You make these breakfast pizzas from tortillas and top them with avocado and a fried egg. Also great for Easter! 

For 2 breakfast pizzas:

  • 2 medium (multigrain) tortillas
  • 1 ripe avocado
  • Lemon juice
  • 2 large eggs
  • coconut oil
  • Pepper and salt
  • Optional: Sriracha and bacon

Mash the avocado with a fork and season with salt, pepper and a little lemon juice. Heat a frying pan and fry the egg in it. Preferably fry in coconut oil, because then the edges will be wonderfully crispy.

Heat the tortilla in the microwave or in a dry frying pan and top with the avocado and egg. Top with Sriracha  or bacon if desired.
