Banana bread, or actually banana cake: always good. Best served with very ripe bananas! The texture of this cake is between dry and crunchy and creamy. Oh, can we have another slice?
For 1 banana bread
- 2 (regular size) ripe bananas
- 250 grams of flour
- Teaspoon baking powder
- 115 grams of soft butter
- 115 grams (brown) sugar
- 2 beaten eggs
- pinch of salt
- Optional: Handful of pecans, roughly chopped
Handy: this is how you quickly ripen bananas for banana bread (in 30(!) minutes)
How to make banana bread
Preheat the oven to 180 degrees and grease a cake tin.
Combine the flour, baking powder and salt. Just mix. Mix the softened butter with the sugar in another bowl.
Mash the bananas with a fork (the riper the bananas, the easier this is) and mix in the beaten eggs. The finer you mash the bananas, the fewer pieces of bananas you will taste in the cake.
Add the banana-egg mixture to the sugar-butter mixture and mix well with a spatula or spoon. Now add the flour mixture. Mix well again.
Optional: If you like, add finely chopped pecans or walnuts to your banana bread. Dark chocolate chunks are also very tasty in this.
Pour the mixture into the greased cake tin and place in the oven. Check after 45 minutes whether it is cooked by inserting a skewer; if it comes out clean, it’s done. Otherwise, bake for another 5 minutes in the oven. Enjoy!
