For about 8 servings:

  • 200 grams of oatmeal
  • 100 grams of nuts (walnuts, hazelnuts, almonds etc)
  • 50 grams seeds (chia, sesame, linseed, sunflower or pumpkin seeds etc)
  • 70 grams cranberries, cut into smaller pieces if desired
  • 4 tablespoons grated coconut
  • 4 tablespoons coconut oil, melted
  • 3 tablespoons honey, date molasses or agave syrup etc
  • 2 ripe bananas
  • 1 teaspoon vanilla extract

Preheat the oven to 200 degrees. Take out a baking tray and line it with baking paper.

In a large bowl, combine the oats, nuts, seeds, cranberries and shredded coconut. Melt the coconut oil in a pan, stir in the honey and mashed banana. You can use a mixer, but a fork also goes a long way. Add the banana mixture to the dry ingredients and mix well.

Place the unbaked granola on a baking tray and bake in the oven for about 15-20 minutes. Keep an eye on it, because with some ovens the granola will brown quickly. After 10 minutes you can break the granola and toss it, so that all sides bake well.

Leave the granola in the oven for a maximum of 20 minutes. To let it cool completely, then you can store it in a Tupperware or preserving jar. Although I secretly like warm granola with yogurt with some summer fruit.
