For 1 person:

  • 2 eggs
  • 2 cherry tomatoes
  • Half ball of mozzarella
  • Sprig of fresh basil
  • Pepper and salt
Olive oil
  • Small oven dish

Preheat the oven to 180 degrees. Grease a small baking dish with some olive oil. Break the eggs into the bowl and season with some salt and pepper.

Cut the cherry tomatoes in half and divide them over the eggs. Tear the mozzarella into pieces and place it on top of the eggs.

Bake the eggs for about 10-12 minutes. They are ready when the egg whites have set. The best is when the yolk is still a little soft. Garnish with some fresh basil.
