For 6 people:

  • 2 eggs
  • 40 grams of sugar
  • Pinch of salt
  • 1 banana
  • 2 passion fruits
  • 125 grams of rice flour
  • 1 teaspoon baking powder
  • 50 grams coconut milk

Miljuschka: “This is a breakfast that was born from my desire for a tropical start to the day. I had a big bag of passion fruit and a banana that screamed for a happy ending. I mixed this with some rice flour and coconut milk.

Oh yes: you can buy the rice flour at the health food store or organic supermarket. You do need a steam basket for the finish, but you can buy it for a few euros at the toko or cooking store. And the result is delicious!

The recipe

Start separating the eggs. Beat the sugar with the egg yolk until it is pale and there are no bubbles. This can take up to five minutes.

Put a pan with water on. Note: take a pan that will eventually fit your steam basket.

In another bowl, beat the egg whites stiff with a pinch of salt. Mash the banana through the egg yolk. Stir in a passion fruit, rice flour, baking powder and coconut milk. Fold the beaten egg white into the batter.

Now place a sheet of baking paper that is slightly larger than the bottom of your steamer basket in the basket. The intention is that the edges of the paper are raised so that a kind of container is created in which the batter can be placed.

Pour in the batter and place the pulp of the last passion fruit in the middle. Steam the cake for 25 minutes. Eat warm and drink a fresh coconut with it.
