  • 100 ml fresh orange juice
  • 1 tablespoon lemon juice
  • The zest of 1.5 orange
  • 5 egg yolks
  • 125 grams of granulated sugar

Place the orange juice, lemon juice, orange zest, egg yolks and sugar in a saucepan and stir well. Place the pan over low heat and heat the mixture, stirring, until it starts to thicken. A curd is ready at about 80 ᵒC, the egg yolks then create a binding that makes the curd thicker.

To check if it’s good, dip a spatula in the mixture and draw a line over it with your finger; if the curd stops running, it’s good. It is very important that you do not let the mixture boil, then you will get a piece of congealed egg and you do not want that.

Remove the orange curd from the heat when it is thick enough and pass it through a sieve. Stir in the butter and then let the orange curd cool. Keep it in the fridge.
