First make the plum compote. Heat a saucepan over medium heat and add all the ingredients in it. Stir well until the plums have reduced to a syrupy mass.

Also fry the vegetarian bacon until crispy and set aside.

Heat a pan and melt a knob of butter. With a tablespoon (or a squeeze bottle or a batter dispenser) make small heaps of the dough the size of a poffertje. Fry the poffertjes on both sides until golden brown.

Tip: Do you have an empty ketchup bottle? If you rinse it thoroughly, you can put your batter in it and then use it as a squeeze bottle.

Serve the poffertjes with a few teaspoons of the plum compote, the grated Dutch cheese, the bacon and a little powdered sugar.
