For 1 person:
- 1 cup milk (cow’s milk, almond milk, rice milk)
- 1/2 cup oatmeal
- 1 teaspoon cinnamon
- 1 banana
- Maple syrup or honey
- Optional: dried apple and raisins
We used Rude Health’s Bircher Muesli as a base, a mix that mainly consists of oatmeal, but also a little dried apple and raisins. You can add these ingredients yourself, or use regular oatmeal.
Heat 1 cup of milk (cow’s milk, almond milk, rice milk, whatever you like!) with half a cup of oatmeal and cinnamon in a saucepan and bring to the boil. Let it boil for a few minutes until the milk has been absorbed by the oatmeal and a firm mass is formed. Let cool a little bit.
Meanwhile, slice a banana and fry in a non-stick frying pan with a little maple syrup or honey. Make sure that the banana caramelizes nicely, but not too dark.
Serve the warm oatmeal porridge with the caramelized banana.
