What do superheroes eat for breakfast? These whole wheat pancakes! These pancakes are the ideal recipe for parents whose children prefer to store whole stacks of pancakes.

Ingredients

For 4 persons:

  • 200 ml buttermilk
  • 50 grams of chia seeds
  • 2 tablespoons crushed linseed
  • 64 grams of oatmeal flakes
  • 96 grams of flour
  • 96 grams of whole wheat flour
  • 1 tablespoon coconut blossom sugar (or other sugar)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, beaten
  • 2 tablespoons melted unsalted butter + extra for the pan

Before serving:

  • Maple syrup, butter, cinnamon and sugar, jam or whatever you like

Also needed:

  • Frying pan with non-stick coating
  • Spatula

Nutritious whole wheat pancakes

A really good idea from Bon Appétit editor Carla Lalli Music: she came up with a way to make pancakes more nutritious, without sacrificing taste. We adapted the recipe a bit for a version that can’t fail.

Not only are we full of these whole grain pancakes for quite some time, they also have more flavor than regular pancakes. We don’t want anything else!

The recipe

Step 1

Pour the buttermilk into a measuring cup and mix with the chia seeds. Stir well and let it stand for a while.

Step 2

In a large bowl, whisk together the crushed flaxseed, oat flakes, regular flour, whole wheat flour, sugar, baking soda, baking powder, and salt.

Step 3

Pour the buttermilk mixture into the dry ingredients, as well as the beaten eggs and melted butter. Gently fold everything together with a spatula until the ingredients are well mixed.

Step 4

Grease the frying pan with a little butter, spoon a little batter into the pan and fry the wholemeal pancakes on both sides until golden brown. As soon as you see air bubbles forming in the batter, you know that you can turn the pancake. Fry them for about 4 minutes on one side and 1 to 2 minutes on the other.

Step 5

Serve the whole wheat pancakes in a large pile and pour maple syrup over them.
