For the pancakes:

  • 160 ml milk

For the green pancakes

First let the spinach shrink in a pan with a little bit of hot water. Let the spinach drain and cool, squeeze the excess liquid from the spinach and chop it finely.

In a large mixing bowl, combine the self-raising flour, baking powder, salt, cumin, whole egg and milk. Also add the melted butter. Don’t panic if you get a fairly stiff fitting: that’s part of the plan. Add the chopped spinach, spring onions and green chili pepper and stir with a fork.

Beat the egg white with a mixer until stiff. Carefully fold this into the batter for the green pancakes.

Heat a little olive oil in a non-stick pan and spoon the batter into the pan in about two tablespoonfuls. Press it down a bit so that they become nice and flat. After two to three minutes, flip the pancakes and cook on that side for just as long.

Place a not too deep pan of boiling water on the stove. Add a splash of vinegar.

Break the eggs into separate bowls. Lower the heat under the pan of water until the water is boiling very gently. First create a whirlpool in the water in the pan with the help of a fork or spoon and then carefully add an egg. Don’t overcrowd the pan: poach the eggs solo or in pairs.

After about three minutes (for a very soft-boiled egg) remove them from the pan with a slotted spoon and let them drain briefly on kitchen paper.
