These green pancakes are irresistible! The batter includes spinach, spring onions and cumin. Especially for Easter we give Ottolenghi ‘s recipe a whirl and go for a poached (Easter) egg on top.
For 3 to 4 people
For the pancakes:
- 225 grams fresh spinach, washed
- 96 grams of self-raising flour
- 1 tablespoon baking powder
- 1 egg
- 1 egg white
- 4 tablespoons melted butter
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 160 ml milk
- 3 spring onions, finely chopped
- 2 green chilies, finely chopped
- Olive oil
For on top:
- 3 to 4 eggs
- splash of vinegar
- 2 tablespoons melted butter
- Pepper and salt
- Maybe some chives
For the green pancakes
First let the spinach shrink in a pan with a little bit of hot water. Let the spinach drain and cool, squeeze the excess liquid from the spinach and chop it finely.
In a large mixing bowl, combine the self-raising flour, baking powder, salt, cumin, whole egg and milk. Also add the melted butter. Don’t panic if you get a fairly stiff fitting: that’s part of the plan. Add the chopped spinach, spring onions and green chili pepper and stir with a fork.
Beat the egg white with a mixer until stiff. Carefully fold this into the batter for the green pancakes.
Heat a little olive oil in a non-stick pan and spoon the batter into the pan in about two tablespoonfuls. Press it down a bit so that they become nice and flat. After two to three minutes, flip the pancakes and cook on that side for just as long.
For the poached eggs
Place a not too deep pan of boiling water on the stove. Add a splash of vinegar.
Break the eggs into separate bowls. Lower the heat under the pan of water until the water is boiling very gently. First create a whirlpool in the water in the pan with the help of a fork or spoon and then carefully add an egg. Don’t overcrowd the pan: poach the eggs solo or in pairs.
After about three minutes (for a very soft-boiled egg) remove them from the pan with a slotted spoon and let them drain briefly on kitchen paper.
Setting up the board
Stack the pancakes on a plate – 2 or 3 per person, depending on the size of your pancakes and the size of your appetite – and place the poached egg on top. Finish with some salt and pepper and possibly some chives. Finally, drizzle the melted butter over the pancakes.
