Kim Waninge proves with her Banana Book that you can make endless recipes with bananas . From sweet to savory. Or just that nice combination between savory and sweet, as in this recipe for brioche French toast with bacon and banana.
For 2 people:
- 8 slices bacon
- 200 ml milk
- 1 egg
- 1 teaspoon cinnamon
- Butter (for frying)
- 4 thick slices of brioche
- 1 banana (sliced)
- Maple syrup
French toast is perfect for getting rid of old (white) bread. For a French touch, I use brioche bread in this recipe . That is soft, airy and sweet white bread from France, almost cake-like. Can’t find brioche? No problem. These French toast also taste delicious with Fryske sûkerbôle .
This is how you make these brioche French toast
Fry the bacon in a non-stick frying pan for a few minutes on both sides until golden brown and drain on kitchen paper. Beat the milk with the egg and cinnamon in a bowl or measuring cup. Pour the mixture into a deep plate.
Heat some butter in a frying pan over medium heat. Briefly roll the brioche slices through the milk-egg mixture. Because brioche is so airy it can quickly become soft and limp, so use a spatula to scoop the brioche into the frying pan. Fry the slices until golden brown on both sides.
Divide the French toast between 2 plates and garnish with the fried bacon, the banana slices and a pinch of cinnamon. Pour over maple syrup and serve immediately.
