For about 8 muffins:

  • 3 very ripe bananas
  • 200 grams of flour
  • 1 teaspoon  baking soda
  • 115 grams soft butter (can also be melted)
  • 175 grams of granulated sugar
  • pinch of salt

For this recipe you really need a powerful blender that fits a lot. If you don’t have one, a food processor is also fine, or a  good old  mixer.

This is how you make the banana bread muffins

Preheat the oven to 180 degrees and grease a muffin tin. You can use muffin papers, but you don’t have to.

Mix the flour with the baking soda, salt and sugar.

Place the 3 ripe bananas in a blender and blend completely. Now add half of the softened or melted butter and half of the dry mixture (flour-baking soda-salt-sugar). Blend well. Now add the last halves of the wet and dry mixture and blend again. Stop once everything is well mixed, it doesn’t need to blend any longer. You can optionally stir in between (when the blender is turned off!) with a spatula to ‘help’ the blender.

Divide the batter over the greased muffin tin and bake for 25 minutes at 180 degrees. Check whether the banana bread muffins are cooked by inserting a skewer; if it comes out (reasonably) clean, they are ready. Otherwise, put it in the oven for another 5 minutes. Let the muffins cool in the tin for a while and then eat them (preferably lukewarm).
