Nice amuse-bouche for Christmas; puff pastry snacks filled with a spinach and feta mixture


5 sheets of puff pastry
100 g white cheese/feta, mashed
125 ml sour cream
1 tbsp sesame seeds
100 g fresh spinach
1 tbsp olive oil
1 egg, beaten
Salt and pepper
Cutout shape star or the like.
Baking tray with baking paper 


Heat the oven to 200 degrees. Let the puff pastry thaw. Cut shapes out of the sheets of puff pastry and place them on a baking tray lined with baking paper. Brush with some egg and sprinkle with some sesame seeds. Bake them in the oven for 15 minutes or so. Meanwhile, heat 1 tbsp olive oil in a large pan. Cook the spinach until it has wilted nicely. Put the spinach in a sieve and squeeze out as much moisture as possible and let it cool.

Stir together the sour cream, white cheese, sauteed spinach and a little salt and pepper. Remove the puff pastry stars from the oven, let them cool slightly and cut them in half. Spoon some of the spinach mixture on the bottom part and cover with the top. Serve the puff pastry snacks on a nice bowl or plate.
