News, food post & hotspots – February 2020

Must Try

It was a short and special month, with several milestones and things to celebrate. And I also have very nice news! 

I made a lot of new tasty recipes this month. Not only for the site but also for my cookbook which will be in the store in September. Fortunately, I also have help from Jaimy and Hilde who also occasionally make recipes.

For those who hadn’t heard or read it yet: there will be a LeukRecepten Cookbook! So cool! And in February I announced it on social and the site. So now I’m busy making recipes and elaborating and collecting texts.

All these recipes also mean a lot of prep and grocery shopping. I always make a meal plan at the beginning of the week with all the recipes that I want to cook that week and then go shopping. Sometimes online and sometimes by bike.

Eric and I had an appointment with our web builders with whom we made beautiful new plans to make the site function and improve even better. Before that, I went for a toast with hummus and latte for lunch at the Barista Café in Amersfoort, a nice hotspot for coffee, breakfast or lunch.

Working together! Payo often wants to sit on my lap when I’m working on the computer. He often falls asleep there and sometimes he wants to push me off the chair 🙂

Eric and I were together 10 years this month! We got to know each other on the shop floor at the publishing house where we both worked as graphic designers and the spark jumped during a salsa dance. This photo is one of our first photos together in Rotterdam.

To celebrate this we had dinner at ‘our’ restaurant Pezzaz in Nuenen. There I enjoyed, among other things, this delicious red beet carpaccio. On to the next 10 years!

It was also Eric’s birthday, he turned 40. That is quite a milestone. Fortunately, most people estimate Eric under 40 🙂 To celebrate his birthday, we went out for dinner with his family at Que Tapas in Eindhoven.

Even more celebration, because it was my nieces Zoe and Sophie’s birthday. These twins turned 1 year old and my brother and his wife had baked and made a beautiful cake themselves. Really very tasty!

I don’t find it difficult to come up with dinner, but I often find lunch difficult. I recently made a large tasty banana oatmeal pancake with a topping of Greek yogurt, fruit and nuts. Highly recommended to make once!

There was also baking in the kitchen and I have already started working on new Easter recipes. Before you know it, the time has come! And of course the spatula was licked.

I got another tasty food post from Tony’s. A bar with chocolate egg with almond paste and nuts, from now on in stores for € 3.46. I really liked it but not my favorite taste of Tony’s. That is and remains the caramel sea salt.

I also got 2 bags of Oat granola: Pumkin Spice and Low Carbohydrate. The Oat granola is sent home fresh and contains less sugar and is also gluten-free. I have already finished the Pumkin Spice and it was delicious!
