Eric and I had lunch at the Happiness café in Eindhoven together with Hilde. She is a dietitian in training and writes interesting and informative blogs for LeukRecepten, such as this blog about low -salt food .
It was hot in August, we had a heat wave of more than 10 days. We had therefore set up a bath in our garden and Payo occasionally went to cool off in a pond near us.
Together with my in-laws we went to dinner at De Koetsier in Boxtel. I took a vegetarian surprise menu and that was delicious. We started with this pea mousse that was surprisingly fresh and tasty.
It’s been a long time but I was once again in front of the camera recording a video. And I had a famous guest here in my kitchen to help me out. In October the video will be on my Youtube channel.
Our nephew turned 6 years old, so it was a party! It is a joy to watch him grow up and that is suddenly going very fast.
There was also a lot of cooking, although because of the heat wave I often did it quickly and easily. For example, I made this delicious spinach risotto. The recipe is still online.
We went on a maternity visit to Jaimy, she helped me cook for her maternity leave and corona twice a month, so we hadn’t seen her for a long time. And now she suddenly has a little one; Noah. So nice to see that everything is going well and that the new parents are enjoying themselves.
Due to the release of my very first cookbook, I recently had several interviews with various magazines and press. One of them was Njam pies, so nice to see them again!
We discovered a very nice new popup hotspot in Eindhoven: the Stadsoase. Here you sit with your feet in the sand and order tasty drinks and snacks.
We also had dinner at Fifth nre and we were supposed to go to the outdoor movie but unfortunately that was canceled due to the bad weather. But we did have a great meal!
I also received nice mail like this vegan tear-off calendar for 2021 with all plant-based recipes. I also occasionally eat vegan and this calendar comes in handy.
The Tony’s store opened again and to celebrate this I was allowed to put together bars of Tony’s myself. You can do this online and in the store. And no, I didn’t eat them all myself. I handed them out to people who have helped me lately.
I think I eat a meat substitute twice a week. And these new burgers from Boon are a must. This falafel burger and chili burger are therefore made from beans and do not contain soy.
I received a package with beautiful ingredients from Lindenhoff, a webshop where you can order delicious products directly from the farmer, for making a panzanella salad from the new Delicious magazine, for which Yotam Ottolenghi is editor-in-chief.
