Separate the eggs and beat the egg whites with a mixer until stiff. Fold in the cheese and half of the breadcrumbs and season with the parsley, red pepper, salt and some pepper. Make small balls of the batter with your hands. Beat the egg yolk and dip the balls first in the egg yolk and then in the other half of the breadcrumbs. Heat the oil to about 180 degrees and fry the balls for 3 minutes until brown. Let them drain on a kitchen paper.
