In this monthly overview of January you get a look behind the scenes, you see how I survived the first month of 2022 and I share new recipes, fun eating tips and tasty food post.

The month of January is always dominated by good intentions and healthy eating is often part of that. That’s why a lot of nutritious and light meals came online, such as lettuce wraps , curry with cauliflower rice and a winter bowl . And I also made new tasty recipes with extra vegetables and vitamins.

Another resolution that is becoming increasingly popular is veganuary, which means eating vegan for a month. To promote that, I made a tasty vegan breakfast in collaboration with MyMuesli.

Together with my niece and girlfriend we organized a nice lunch together. I made dessert. But I forgot to bring it, so silly! We also ate a delicious soup and a patty with vegetarian sour mushroom meat

Twice a month my colleague Charlotte comes to our office at home, we discuss new projects, social media, newsletters and we regularly make new recipes together.

Sports was also on the agenda in January. I have had personal training 1 x a week through Lets do it personal training for a few months now. And that is sometimes tough, but also very nice, that way I stay motivated!

My in-laws enjoyed an extensive Indonesian rice table with, among other things, gado gado, nasi kuning, tofu salad and more goodies.

And I baked super tasty chocolate muffins, with 3 kinds of chocolate. The recipe will be online soon!

And I took these chocolate muffins with me to my family, because my parents were moving and therefore we could use some extra energy. And also a bit strange to see the house where you grew up empty.

Yes, I could finally go to the hairdresser again! Although I have had blonde highlights in my hair for a long time, I am now going a little darker and back to my own color.

I received a delicious food post from the yogurt Barn, who have recently started having ready-made overnight oats in the supermarket. So easy and fast! And you can go wild with tasty toppings.

Payo has been very anxious lately, and then he crawls under a table or in a corner. Luckily he is completely relaxed on my lap.

And I was very happy when I heard that the catering industry was allowed to open again! I immediately booked something with Eric at the Thomas in Eindhoven. There you can enjoy all kinds of tasty dishes and cocktails.

Furthermore, it is very busy behind the scenes, we are working on a few new projects and we had some problems with our server due to the high number of visitors. After a busy day , I regularly make gnocchi in tomato sauce . Delicious, and because I use tomato sauce, it’s ready in 10 minutes!

The last weekend of January we had a guest house, our 5 year old niece Lois came to stay. That was very nice and she said I should start my own restaurant because I cooked so well, well I put that in my pocket 🙂
