In this monthly overview of February you get a look behind the scenes, Eric had his birthday and we celebrated this quite special, unfortunately we also received corona and the first Easter recipes are in the photo.

I made the first Easter recipes in February , and although the Easter eggs are ridiculously early in the shops, this is now convenient.

I also made tasty and fresh spring recipes such as this delicious pasta with green asparagus. The recipe will be online soon!

Eric’s birthday was on February 8, so I had organized a weekend trip to Tilburg. There we went to Doloris, a surreal maze with strange rooms, corridors and objects. You are not allowed to take your phone with you, so unfortunately you have no image inside.

Then we went for a bite to eat at their rooftop restaurant. We enjoyed gyoza, sushi and cannoli there.

As a treat I made nice fresh lemon muffins, Eric loves them! And of course I had to try some too 😉

After not having had corona for 2 years, Eric and I were really next. Fortunately we weren’t very ill, but I did suffer a lot from fatigue and loss of concentration, so I spent a lot of time on the couch with Payo.

I love sausage rolls, and when I became a vegetarian a few years ago, I was bummed that I couldn’t eat these anymore. But luckily Houben makes really fantastic vegetarian sausage rolls!

The month of February was also dominated by the storm. The only advantage is that there were many sticks in the forest and field for Payo to play with.

When we were out of quarantine again we went for a bite to eat at fifth NRE in Eindhoven. And we were lucky because there was also a live band playing nice jazzy music.

And besides good food they also have fantastic cocktails like this pornstar martini. And Eric and I had good reason to toast as we were celebrating our 12 years together!

A lot of new things are happening behind the scenes, I’m currently working on 3 new projects that all have to do with LeukRecepten, just a little patience and then I can tell you more. It’s going to be really cool!

We got a place to stay, Sawyer the beagle of my in-laws came to stay with us for a week. Very funny!

Eric and I made a journey through time, in the Evoluon there was a VR experience in which you wear glasses and you enter another world for a while. Unfortunately, the last time was in February, but take a look at Next Nature for more exhibitions and experiences.

About 1 x a week I do a leftover day, then I collect everything from the fridge and make something delicious. This time I made a noodle soup with leftover broccoli, carrot, spinach and an egg. Delicious!
