400 ml water, at room temperature
60 gr butter or margarine
250 ml whipping cream, cooled
3 half peaches in juice

2 peach halves in juice

Preparation

Meanwhile, cut the 3 peaches into small cubes. Put the water and the cake mix in a bowl and beat with a mixer on the lowest setting for a minute. Add the quark and the unwhipped cream and mix on the highest setting for 2 minutes until a creamy mixture. Pour half of this mixture over the biscuit base and divide the peach cubes over it. Pour the rest of the mixture over it and smooth out. Put the cake in the fridge for at least 2.5 hours (only after that you start decorating).

After the cake has set, cut the edge of the springform with a sharp knife and remove the springform. Beat the 125 ml whipping cream with the half sachet of beat-fix stiff with the mixer. Wash the lemon and cut into thin slices (remove any pips). Half the lemon slices. Cut the peaches into thin slices. Place 6 half slices of lemon on the cake and place the peach slices half against this. Make nice swirls in the middle of the lemon and peach. Make another swirl in the middle of the cake and decorate them all with the little Easter eggs.

Tips
  1. If you don’t have a sprout bag at home, use a freezer or sandwich bag and cut a small tip from one of the bottom corners of the bag. With this you will not get a serrated edge in your tuft, but you can make even tufts.
  2. Use pineapple or mandarins instead of peaches.
  3. It is best to decorate the cake with the Easter eggs up to 1 hour in advance, otherwise the color may bleed and the tufts collapse slightly.
