A classic combination of melon and Parma ham in a roll of wraps.
Mix the mascarpone with the pesto. Cut the melon into quarters and remove the seeds and skin. Cut into very thin slices (they should be able to bend) and then into pieces. Spread the wraps with the pesto mixture and cover each wrap with 2 slices of Parma ham, pieces of melon and some pine nuts. Carefully roll them up. Spread some extra pesto mixture at the end to ‘stick’ it. Roll the wrap in aluminum foil and let it set in the fridge for an hour. Unwrap the foil and cut the wraps into slices with a sharp knife. Insert a skewer and serve on a plate or bowl.
