Tasty snack of mini peppers filled with a spicy minced meat mixture and au gratin in the oven




 Heat the oven to 200 degrees. Chop the onion and garlic and fry them in a pan. Add the minced meat and fry. Season the meat with the herbs. Stir in the tomato paste and water. Let it simmer for 10 minutes. Cut the snack peppers in half lengthwise, remove any seeds and place them on a baking tray (or baking dish).

 Fill them with the mincemeat mixture and top with a few slices of olive and jalapeño and sprinkle with some cheese. Place in the oven for 10 minutes until the cheese has melted. Serve them with some sour cream and parsley or coriander.

 Tip: instead of all ‘loose’ herbs you can also use a taco spice mix
