Delicious creamy healthy hummus from roasted pumpkin and chickpeas, delicious with a drink or on bread or a cracker at lunch




Heat the oven to 200 degrees. Place the pumpkin cubes in a bowl and add a tablespoon of olive oil along with a pinch of salt and pepper. Divide the pumpkin on a baking tray with baking paper and roast the pumpkin for about 20 to 25 minutes.
Drain the chickpeas well and put them in a food processor. Add the tahini, garlic, paprika, rosemary and cumin. Add the pumpkin cubes (save a few for garnish) and mix together. Gradually add some oil until you have a smooth but firm mass, but don’t mix it for too long.
Put the hummus in a bowl and garnish with some pumpkin, chickpeas and extra rosemary if desired.
Tip: keep the hummus covered in the refrigerator.
