 Heat the oven to 200 degrees. Finely chop the walnuts. Mash the goat’s cheese with a fork and stir in the walnuts, a squeeze of honey and a pinch of thyme, salt and pepper.

 Place the filo sheets under a slightly damp cloth so that they do not dry out. Take 1 sheet and cut it into 3 equal strips. Brush it lightly with melted butter. Spoon a little of the goat cheese mixture on top at the beginning and fold a point over it.

 Fold the stuffed part again and press the edges well. Fold diagonally upwards until the filo dough is used up. Fold or press the last piece firmly and place it side down on a baking tray lined with baking paper. Repeat this with the rest.

 Brush the top of the filo pastry well again with a little butter. Then bake them in the oven for 20 minutes until they are crispy and golden brown.

 Tip: you can also make the snacks in advance and warm them in the oven for a few minutes before serving.
