Recently I went back into the kitchen to record a video, this time not in my own kitchen but in a professional cooking studio with a camera team and all the trimmings. Exciting but super cool!

I had come up with a tasty recipe in advance, namely stuffed courgettes with chicken and cottage cheese. With this you can easily put something delicious on the table. By combining Hüttenkäse with couscous, apricots and pistachio you get a fresh filling with a Moroccan twist. I’m curious what you think about it!

Stuffed zucchini with chicken and cottage cheese

Ingredients 2 pieces (1 or 2 persons):

75ml water
1/4 vegetable stock tablet
40 gr couscous
70 g smoked chicken, cubed
50 gr soaked apricots
2 tablespoons pistachios, unsalted
A few sprigs of parsley
1 zucchini
200 g cottage cheese

Preparation:

First bring a little water to the boil for the couscous. Dissolve half the stock cube in this. Once the water is boiling, add the couscous and turn off the heat. Let the couscous soak with the lid on the pan for 5 to 10 minutes. I also preheat the oven to 200 degrees.
In the meantime we can continue with the courgettes. We are going to half this and then hollow it out with a spoon. We don’t throw away the pulp, but roughly chop it to use in the filling.
To the pulp I add the cubes of smoked chicken, parsley, apricots and pistachio. Let’s mix this up. Then the Hüttenkäse is added. Once the couscous is ready, we stir it. Then we also mix the couscous with the filling. Fill the courgettes with the mixture and put them in the oven for about 25 minutes
