To kick off, I’m sharing my Quaker recipe for breakfast biscuits with yogurt and fruit. Because who wouldn’t want to have breakfast with cookies? They are nice and crunchy on the outside but still a bit soft on the inside. And super quick and easy to make. If you are smart you can bake a whole load in advance so that in the morning you only have to put a little yogurt and some fruit on it. Your day can’t get any better!
Recipe Cruesli breakfast cookies with yogurt
120 gr Quaker Cruesli 4 Nuts
4 dates, chopped
40 gr melted butter (or coconut oil)
60 gr spelled flour
1 tablespoon honey
170 gr Greek yogurt or quark
Fresh fruit of your choice
Heat the oven to 200 degrees. Put the Cruesli cereals in a bowl and break any large pieces into smaller pieces. Add the butter, dates, egg and honey and stir through. Then add the spelled flour little by little until it is firm in texture.
Make heaps on the baking tray with baking paper and flatten them in the shape of a cookie. Bake them for about 13 minutes. They will still be a little soft when they come out of the oven, but they will harden when they cool down. When they have cooled completely, spoon some Greek yogurt on top. And as a finishing touch, divide the colorful fruit over the cookies.
Tip: You can store the cookies with topping in the fridge for a day. The cookies without topping in a closed container in a dry place for a few days.
