How to make this big Old Amsterdam cheeseburger (2 pieces):

2 crispy buns
handful of lettuce
2 slices Old Amsterdam cheese
2 grilled peppers (from the BBQ or jar)
2 red onions
1 tablespoon sugar
splash of balsamic vinegar
4 slices of bacon
Hamburger:
200 to 250 gr minced beef
1 egg
3 tablespoons breadcrumbs
pinch of black pepper
Pinch or mild paprika powder
1 tablespoon jalapeño peppers in small pieces

Preparation

Fry the bacon crispy in a dry pan and then drain on a piece of kitchen paper. Cut the red onions into thin rings and fry them together with the sugar for 1 minute in the fat of the bacon. Deglaze the onions with the balsamic vinegar and let it stew over a low heat for 10 minutes.

Meanwhile, mix the minced meat with the egg, breadcrumbs, paprika and black pepper. Then knead in the jalapeño pepper pieces as well. Form 2 nice burgers from the minced meat mixture (this can be done with a hamburger press or simply with your hands). Bake the burgers in a (grill) pan for about 8 minutes on both sides until nicely browned and cooked through.

Cut open the buns and divide some lettuce and grilled bell pepper over the bottom. Place the burger on it. Fold a slice of Old Amsterdam in half and place on the burger. Then also divide the fried bacon and the onion compote over it. Cover with the top of the bun and enjoy!
