Salmon is a popular piece of fish and is regularly on my table. You can easily combine salmon with other ingredients such as pasta, spinach or in an Eastern dish. This pink fish is also quick and easy to prepare. In my recipe I marinated the salmon in lime juice, oil, chives and parsley. This gives the salmon a delicious fresh taste.

I use Reddy Premium Sunflower Oil for the salmon . This oil has a neutral taste, is suitable for high temperatures and is also rich in unsaturated fats. By using this oil in the marinade, it absorbs the flavor of the ingredients. This makes the flavors well distributed and more intense. By serving the salmon with some crispy fried vegetables, such as broccoli and bell pepper, you can create a tasty and healthy meal in less than 30 minutes. So if you’ve made resolutions and you love good food, this is highly recommended!

Recipe seasoned salmon with finely chopped stir-fried vegetables

 2 PERSONS

Ingredients

2 pieces of salmon (with skin)
1 lime
Sprig of fresh parsley
A few sprigs of chives
Pinch of pepper and salt
A dash of Reddy Premium Sunflower oil
150 g small florets of broccoli, precooked for a few minutes
1 bell pepper, finely chopped
1 red onion, chopped

Preparation

Stir the parsley and chives together. Squeeze the lime with the herbs and add a generous dash of Reddy Premium Sunflower Oil. Stir the herb oil well and pour over the salmon.

Meanwhile, continue with the stir-fry vegetables. Heat a dash of Reddy Premium Sunflower
Oil in a pan and fry the red onion. Then add the bell pepper and broccoli. Season the vegetables with a pinch of salt and pepper. Let the vegetables cook for a few minutes.
Meanwhile, heat another skillet over high heat. Carefully place the marinated salmon in the pan, skin side down, and fry until slightly crispy on the underside. Sprinkle the salmon with a pinch of salt and pepper. Fry the other sides briefly, for a total of 4 to 5 minutes.
Put some stir-fried vegetables on a plate and serve with a piece of salmon. Drizzle the dish with a little oil to make the fish shiny. Serve with a wedge of lemon if desired.
