Salmon and crote with spinach and Boursin

Salmon and croûte

Ingredients

1 piece of salmon a 600 to 700 grams
500 gr fresh spinach
150 gr Boursin Garlic & Fine herbs
30 g pine nuts
Juice or half lemon
1 egg
Pepper and salt
1 roll of fresh puff pastry a 270 grams
1 tbsp olive oil
1 tbsp breadcrumbs

Preparation

Heat the oven to 200 degrees. Drizzle the salmon with the lemon juice and sprinkle with salt and pepper. Heat the olive oil in a large pan and fry the spinach until it has completely wilted. Place the spinach in a sieve and squeeze out most of the liquid with the back of a spoon.

Place the spinach in a bowl and stir in the Boursin. Roll out the puff pastry on a baking tray with baking paper (if this is not already included with the puff pastry roll). Sprinkle the top with a little breadcrumbs.

Place the piece of salmon on the front part of the puff pastry. Spread the spinach mixture over the salmon. Sprinkle with some pine nuts. Fold the back piece of puff pastry over the salmon and spinach.

Press the seams tightly and fold the sides well. Beat the egg and brush the top of the puff pastry package with it. Place the salmon and crote in the oven for 30 minutes. Delicious with baked potatoes or mashed potatoes.

Tips:

  1. If you don’t like garlic, try Boursin Shallot & Chives.
  2. (semi) Dry white wine is delicious with this fish dish.
  3. Make a few indentations on top of the puff pastry to allow the moisture to escape.
  4. Instead of a large roll of puff pastry, you can also sew 6 to 8 small slices of puff pastry with the seams together.
  5. Instead of 1 large piece of salmon, make small single portions of salmon in puff pastry
