Now that the days are getting shorter and colder, I’m already craving stew with kale. But you can do a lot more with kale.
Did you know, for example, that you can also stir-fry it very well or taste delicious in combination with a dash of soy sauce? Or as a salad with goat cheese, for example. To inspire you even more, you will find below a delicious recipe of portobello mushrooms filled with kale and goat cheese. Have you also made something delicious with kale? Let us know on social under the hashtag #doemeermetboerenkool. I’m curious!
Portobello with kale
2 TO 4 PERSONS
4 portobello mushrooms
100 g kale
100 g goat cheese
splash of balsamic vinegar
2 tablespoons hazelnuts, roughly chopped
4 tablespoons grated cheese
pepper and salt
Preheat the oven to 180 degrees. Chop the onion and fry it in a little olive oil. Add the kale and stir fry for 2 minutes. Add a dash of balsamic vinegar and stir. Crumble in the goat cheese.
Place the portobello mushrooms in a baking dish. Fill them with the kale-goat cheese mixture. Mix the cheese and hazelnuts and sprinkle over the large mushrooms. Put them in the oven for about 15 minutes. If you want to eat the portobellos as a main course, serve it with some pasta or quinoa for example and count 2 pieces pp
