This lunch dish is a delicious combination of all flavors on 1 sandwich. I usually take a wholemeal or multigrain bun, but a pistol or a ciabatta is also possible. The Maaslander goat cheese forms the basis of the sandwich and is nice and soft and creamy and accessible to everyone. 75 g soaked apricots
1 lime
A few sprigs of coriander
30 ml water
2 (multigrain) bread rolls
4 slices Maaslander goat cheese
Handful of lettuce
4 slices bacon or bacon


Cut the apricots into small pieces with a knife. Place a small pan on the stove and squeeze the lime over it. Add the water and the apricot pieces and heat over low heat.

Finely chop the coriander and toss through the apricots. Leave the apricot salsa on low heat for 5 minutes and then let it cool. Heat a frying pan and fry the bacon crispy on both sides and then drain on a paper towel.

Cut the bread in half and top with the Maaslander goat cheese slices. Divide the slices of crispy bacon on top and place a handful of lettuce on top. Spoon some of the apricot salsa on top and enjoy!
