Petit fours are small pastries that usually consist of layers of cake, buttercream and fondant or marzipan. Sometimes chocolate, whipped cream or bavarois are also used. In this blog I show how you can easily make these cute petit fours yourself.

This month I was linked to Handmadehelen’s food blog for the food blog swap. I was happy with it because I love cakes, cupcakes and other sweets. After a long search on her site I came across very cute petit fours. Because I am very busy with my new house this month, I have chosen to use ready-made cake. Hopefully Helen forgives me. You can also bake a thin biscuit base yourself. Furthermore, it was a challenge for me to work with fondant because I have hardly any experience with this. But as you can see, I managed quite well. The roses were also quite easy to make. I have made step by step photos to show as clearly as possible how I made them.

But now the tastiest part of the petit fours; the strawberry buttercream. Because the cream is made with fresh strawberries, it also tasted fresh and not at all like butter (which I was a bit afraid of). It tastes a bit like fresh strawberry ice cream, really delicious!
Fortunately Helen had already mentioned in her blog that she had found square cookie cutters at the Xenos so I bought them there too. With these cutters you can easily cut out the cake and fondant. Maybe it would work with a knife too, but I haven’t tried that.
The petit fours tasted delicious and are a nice treat too. You can decorate them completely to your own liking and are ideal for a high tea, baby shower or wedding.

Recipe petit fours

Because I didn’t want to make very many, I adjusted the quantities of Helen’s recipe a bit. I made 10 of these and ended up with a bit of buttercream left over.

Ingredients

1 butter cake a 450 grams
125 gr butter, at room temperature
125 gr strawberries
50 gr icing sugar
Pink and white fondant

Preparation

Cut the strawberries into pieces and put them together with the butter in a bowl and puree them completely with a hand blender. Mix in the powdered sugar and taste to see if a little more needs to be added. Place the buttercream in the fridge.
To make a rose, take 3 small pieces of fondant and roll them into balls. Crush with your hand or fingers into thin slices. Roll up a slice between your fingers. Fold the other two slices around it and put a little more pressure in the middle with your fingers. Finally, roll so hard with your fingers that the roll splits in half. Then two small roses are formed.

Cut the cake into 10 slices and cut out 2 squares per slice. Roll out the fondant and cut out 10 squares using the same shapes. Spread 10 square pieces of cake liberally with the strawberry buttercream. Smooth the sides with a knife. Place the other pieces of cake on top and cover with the square slices of fondant. Cut off the ends of the foils and place them on top of the petit four.
