Crispy filo dough pizza with salmon

A nice snack to serve during a drink. A crispy base of filo pastry topped with smoked salmon, mascarpone and roasted pine nuts.



Preheat the oven to 190°C.
Cut a circle out of the filo dough with a knife or scissors. For example, use a springform pan.
Melt the butter and grease the filo pastry with the butter.
Place 2 round sheets on top of each other on the baking tray with baking paper. Bake the filo dough for about 10 -12 minutes until crispy. Remove from oven and let cool slightly.
Meanwhile, toast the pine nuts.
Spread the top of the crispy round phyllo dough with some mascarpone. Top with some lettuce and pieces of smoked salmon. Sprinkle with some toasted pine nuts and a pinch of pepper and possibly salt, but not too much, because the smoked salmon is already salty.
Cut the filo dough pizza into wedges for serving as a snack.
Tip: you can bake the filo dough (shortly) in advance, but don’t spread it yet. Then it will remain crunchy even if you want to serve it later.
You can also replace the salmon with other ingredients such as Parma ham or roasted vegetables.
