The tomatoes provide the sweet taste, so use nice juicy tomatoes of good quality. The crispy fried bacon provides a nice crunch and a salty taste. The red onion colors beautifully on the burger, the eye also wants something. The creamy and neutral taste of avocado brings the spicy and salty flavors back into balance. But the most important thing is the sauce, because that can make or break the burger. For this burger I mixed the airy and slightly sour Hellmann’s (available at Albert Heijn, among others) with fresh basil for a fresh topping. Already hungry?

Recipe chicken burger with bacon and avocado

Chicken burger:
400 gr minced chicken
1 egg
1 red pepper
1 pinch of cayenne pepper
pepper and salt
2 to 3 tbsp breadcrumbs
1 shallot
1 clove of garlic
Butter or oil for frying.
4 bread rolls (e.g. multigrain dumplings)
2 tomatoes
8 slices bacon
1 red onion
1 avocado
4 nice leaves of lettuce
Few leaves of fresh basil
6 tablespoons Hellmann’s

Start by making the chicken burger: halve the red pepper and remove the seeds and finely chop the rest. Also finely chop the garlic and shallot. Mix the minced meat with the red pepper, garlic, shallot, cayenne pepper, pepper and salt. Add the egg and little by little the breadcrumbs. If the mincemeat is still very wet, you can add a little extra breadcrumbs. Make 4 nice balls of the minced meat and then flatten them into the size of a hamburger. Heat a little butter or oil in a frying pan and fry the burgers on both sides until nicely browned for about 8 minutes.

Meanwhile, cut the red onion into thin rings and lightly fry in a pan in a little bit of butter or oil. Remove the onion from the pan and fry the bacon until crispy.
Wash the tomato and cut into slices. Cut the avocado in half and remove the skin and pit. Cut the flesh into slices and sprinkle with a little lemon juice. Cut the buns in half and top with a lettuce leaf. Place the chicken burger on top and divide the tomato slices, red onion, bacon and avocado slices on top.

Finely chop the basil in a food processor or with a knife and mix with Hellmann’s in a small bowl. Spoon a generous dollop onto the burger and cover with the top portion of the bun. Enjoy your dinner!
Tip: If you want the burger a little milder, you can also use paprika instead of cayenne pepper and take half a red pepper.
Tip: You can take ready-made minced chicken, but you can also grind chicken breast or chicken thighs yourself in the food processor.
