A Friday afternoon drink, a nice party or dinner. All good reasons to put these tasty Mexican snacks on the table. No boring cubes of cheese and pieces of sausage but finger food snacks to literally lick your fingers!
The Tex-Mex kitchen is characterized by various spices such as cumin, chili and oregano. These herbs are included in the Santa Maria Taco Seasoning mix that I used for the minced meat on the wrap pizzas. This way you can easily give the snack a nice typical Mexican taste.
Wrap pizzas with minced meat
400 gr minced beef
125 ml sour cream
1 x Santa Maria Taco Seasoning Mix
80 ml water
Handful of grated cheese
Baking tray with baking paper
Heat the oven to 200 degrees. Fry the minced meat in a pan with a little oil and add the Taco Seasoning Mix and the water and let it simmer for a while and thicken slightly. Place the wraps on a baking tray with baking paper and divide the mincemeat mixture over it and press slightly. Sprinkle the wrap pizzas with some cheese and put in the oven for about 10 minutes.
Cut the wrap pizza into slices and scoop a teaspoon of sour cream on each point. Cut the avocado in half, remove the skin and pit and cut into cubes and place on top of the sour cream.
Chicken bites with mango skewers
1 x Santa Maria Crispy Chicken Bites Mix
300 gr mango
2 tablespoons oil
1 x Santa Maria Guacamole dip mix + 2 avocados
1 jar Santa Maria Salsa Dip
Baking tray with baking paper
Preheat the oven to the temperature indicated on the package. Cut the chicken into cubes. Mix the chicken with the Crispy Chicken Bites Mix and the oil. Spread on a baking tray lined with baking paper and bake for about 20 minutes until crisp and tender.
Meanwhile, cut the mango into pieces and prepare the guacamole. Remove the chicken from the oven and thread alternately with a piece of mango on the skewers. Serve with the guacamole and the jar of Salsa Dip.
Sweet potato taco tubs
4 medium sweet potatoes
1 small can corn, drained
Splash of oil 40g
Fresh coriander Pinch of
salt and pepper
Heat the oven to 200 degrees. Peel the potatoes, cut into small cubes and place in a baking dish. Drizzle with a little oil and sprinkle with a pinch of salt and pepper. Place the potato cubes in the oven for about 20 to 25 minutes until they start to soften slightly.
Remove the sweet potato from the oven and reduce the temperature to 125 degrees. Fill the Taco Tubs with some sweet potatoes, corn and sprinkle with some cheese. Place the filled taco bites in the oven for another 10 minutes. Finish the Taco Tubs with some fresh cilantro.
