3 x basic recipes for easy sauces

Meat, pasta or vegetables are even tastier in combination with a sauce. Often a package or bag is used (which is also possible of course). But with the basic recipes below I show you how you can easily make your own sauce. You will also find great suggestions on how to use this sauce in a dish.

Gorgonzola sauce

Gorgonzola is a blue mold cheese with a strong taste. This means you don’t have to add any extra spices and this sauce only consists of a few ingredients. I’ve combined the gorgonzola sauce with steak, but it’s also delicious over pasta.

I found the proportions in my recipe just right, not too strong and not too mild. Even if you don’t like gorgonzola very much, you can adjust the recipe and use less cheese. If you really like this distinct taste, you can add a little extra.

Romesco sauce

Romesco is a Catalan sauce traditionally made from nora peppers. But because these are almost not available in the Netherlands, I used roasted bell peppers from a pot. If you have more time, you can also roast peppers in the oven for 45 minutes.

I combined the romesco sauce with pasta, but it’s not really supposed to be, but it just seemed delicious. In Spain, the sauce is served with roasted spring onions. But it is also delicious with other roasted vegetables, meat or with the BBQ. In short, a versatile and easy sauce that is ready in a few minutes. And you can make it as spicy as you want.

white wine sauce

White wine sauce is a versatile sauce from France that is mainly eaten in combination with fish such as salmon, sole or other white fish. But this sauce is also delicious in combination with vegetables such as asparagus and spinach.

As a base, use cream and a dry white wine, such as sauvignon blanc. By adding cold butter you make the sauce thicker and softer (assemble). With the white wine sauce I made cod from the oven with a crispy crust. The crispy crust combines wonderfully with the soft sauce. Complete the dish with some roasted vegetables and/or potatoes.
