I’ve been enjoying the beautiful weather lately! That’s why I couldn’t wait to dust off the barbecue again and make something delicious on the grill. Just before the sun started to gain the upper hand, I received a package from Santa Maria with, among other things, Tex Mex spice mixes, tortilla wraps and sauces. Good timing, because you can easily combine Tex Mex cuisine on the barbecue.

Tex Mex says it all, it is a combination of Texan and Mexican cuisine. It is one of my favorite cuisines, mainly because of the tasty spices and the many possibilities. Some well-known Tex Mex dishes are burritos, tacos and nachos. But beware, not everything in a wrap belongs to this kitchen as standard. Tex Mex cuisine distinguishes itself by making extensive use of coriander, cumin and chili. Oh, and guacamole should not be missing either!
Overview
For my Tex Mex barbecue evening I made 3 recipes: tortilla burgers, bean salad with nachos and quasadillas. Because I already had the Santa Maria products at home, this saved a lot of herbs and spices on my shopping list. For example, the Santa Maria taco spice mix already contains cumin, oregano and chili. This allows you to quickly and easily give a delicious taste to, among other things, the tortilla burger. By combining the spicy dishes with, for example, creamy guacamole, sour cream and cheese, you create a perfect balance of taste!

Tortilla burgers

Ingredients

4 Santa Maria mini tortillas
500 gr minced beef
1 egg
4 tablespoons breadcrumbs
1 x Santa Maria taco seasoning mix
4 slices of cheddar cheese
2 tomatoes
1 red onion
100 g iceberg lettuce
Serve with:
125 ml sour cream
Guacamole (2 avocados + Santa Maria guacamole mix)
Jar of Santa Maria taco sauce

Preparing

Put the minced meat in a bowl. Mix the seasoning mix herbs, the egg and breadcrumbs into the minced meat and knead with your hands. Divide the minced meat into 4 portions and make burgers from it, let them rest covered for an hour in the fridge.

Meanwhile, heat the barbecue and cut the tomato and red onion into slices. Place the mini tortillas on the hot barbecue for about 30 seconds and then place them on a plate. Divide a little lettuce over the tortillas. Bake the burgers on the barbecue for about 10 minutes on both sides. Place the burgers on the lettuce and immediately place a slice of cheddar cheese on top so that it melts. Place the tomato slices and some red onion rings on top. Serve with the different sauces and dips.

Bean salad with nacho chips

4 TO 6 PERSONS

Ingredients
200 g canned brown beans
1 bag of nacho chips
175 g canned white beans (eg cannelini beans)
1 cucumber
Bunch of fresh coriander
1 lime
150 g canned corn
1 jar of salsa dip Santa Maria
Preparation
Drain the beans in a colander and then place them in a bowl. Cut the cucumber into small pieces and toss it through the beans. Then add the drained corn and the jar of salsa dip.

To give the bean salad a fresh touch, squeeze the lime over the bowl and stir in the chopped coriander. Divide the nacho chips over the edge of a large plate and spoon the bean salad in the middle.

Tip: do you make the bean salad a day or a few hours in advance? Place the bowl covered in the refrigerator and serve the chips only when the salad is on the table.

Quesadilla with BBQ chicken

2 large chicken breasts
1 x Santa Maria fajita seasoning mix
8 Santa Maria original soft tortillas
2 peppers
150 gr corn
3 tablespoons Santa Maria salsa sauce
125 g grated cheese
oil for frying
Serve with:
125 ml sour cream
Guacamole (2 avocados + Santa Maria guacamole mix)
Jar of Santa Maria taco sauce
Preparation
Bake the chicken breast in a pan or on the barbecue until tender and nicely browned. Then place the chicken on a cutting board and let it cool for a few minutes. Then shred the chicken with a fork. Place the pieces in a bowl and stir in the fajita seasoning mix and salsa sauce.

Drain the corn and cut the bell pepper into pieces and toss through the chicken as well. Put a little cheese on a tortilla and spread some of the chicken mixture on it. Cover with a layer of cheese and another tortilla. Place the quesadillas on the barbecue and turn them after 2 minutes and fry the other side lightly as well.

Tip: Make sure that the barbecue is not too high, otherwise there is a chance that the quesadillas will quickly become too dark.
