Wrap with balls and coleslaw from the LeukRecepten Magazine

Must Try

As you may have seen and heard, the LeukRecepten magazine has been in stores for a few weeks now. I have already received a lot of nice reactions and have also seen various dishes from my magazine on social media.

In recent weeks I have proudly shown the magazine to many people in the family, neighbors, workmen during our renovation and also strangers. It is often indicated in advance that there is little time to cook and/or that they are not kitchen princes or princesses. But once they leaf through it, they find out that they are really easy and quick recipes and there is an enthusiastic response. I really like that! It proves that you can quickly put something tasty on the table that is slightly different from the meals you might eat every week.

One of my favorite recipes from the magazine is the coleslaw and meatball wraps. I hardly ever eat coleslaw myself, but in combination with the spicy meatballs and wraps I can eat it every day. In addition to the main courses, there are also various desserts, breakfasts, snacks and snacks in the magazine. It is now for sale at various bookstores and supermarkets, you can also order it online (note shipping costs). Update: Leukrecepten magazine 2017 and 2018 are both sold out in the store and online shop and can therefore no longer be ordered.

Wrap with meatballs and coleslaw

4 tortilla wraps
300 gr minced meat
Pinch cumin
Pinch paprika powder
Pinch pepper and salt
1 egg
3 tablespoons breadcrumbs
150 gr white cabbage, finely chopped
50 gr carrot julienne
½ red onion
Small bunch of parsley
2 tablespoons pistachio nuts, unsalted

1 tablespoon vinegar
1 tablespoon mayonnaise
125 ml sour cream
1 teaspoon mustard
1.5 tablespoon sugar
Pinch of salt and pepper
2 tablespoons lemon juice

Mix the minced meat with the egg, breadcrumbs, paprika, cumin, pepper and salt. Knead small meatballs. Bake these in a pan with a little oil or butter until golden brown and cooked through for about 10 minutes. Meanwhile, mix the ingredients for the dressing together in a bowl. Then fold this through the white cabbage, chopped red onion and the carrot julienne. Heat the wraps according to the package. Divide some of the coleslaw over the wraps and place the meatballs on top. Sprinkle with some coarsely chopped parsley and pistachio. Fold the wraps closed and secure with a toothpick.

Tip: replace the meatballs with falafel or vegetable balls for a vegetarian version.
