Ingredients

3 bell peppers
160 gr lettuce (eg arugula, oak leaf, lamb’s lettuce, etc)
4 slices of bread
200 gr feta
6 tbsp pumpkin seeds
4 nectarines
250 gr shrimps
Salt and pepper
Dressing:
1 clove garlic, crushed
Splash of olive oil
1 tbsp white wine vinegar
1 tsp thyme
1 tbsp lemon juice
1 tbsp honey
Salt and pepper

Preparation

Make the dressing first so that it can absorb well. Stir all ingredients together in a bowl and set aside. Grill the peppers for 20 minutes under the grill or put them on a baking tray in the oven at 220 degrees for 30 minutes. Turn them regularly. When they are blackened, place them in a covered bowl. Meanwhile, fry the shrimps in a pan with a little salt and pepper and toast the bread. Remove the black skins from the bell pepper and cut into strips. Cut the nectarines into wedges and mix with the lettuce, shrimp and bell pepper. Pour over the dressing and mix well. Sprinkle the salad with pumpkin seeds and pieces of feta.Cut the toasted bread into strips and serve with the main course salad.
