Ingredients

200 gr minced beef or lamb
3 courgettes
150 gr dates
1 onion
150 gr couscous
½ tsp cinnamon
A few sprigs of fresh coriander
1 tablet for chicken or vegetable stock
60 gr shelled walnuts
2 tomatoes
2 tbsp olive oil
Yogurt sauce :
170 gr Greek yogurt
A few sprigs of fresh coriander
Pepper and salt
2 tsp lemon juice
Materials

Preparation

Heat the oven to 200 degrees. Wash the courgettes and cut or scrape the flesh to about 1 cm from the skin. Cut the flesh into pieces. Cut the tomatoes into pieces and remove the seeds. Heat 1 tbsp olive oil in a large wok or frying pan. Chop the onion and fry it with the ground beef for about 5 minutes. Add the tomato pieces and the pulp of the zucchini and fry for another minute or three, then turn off the heat.

Remove the pits from the dates and cut them into quarters. Add the dates and walnuts to the mincemeat mixture. Season the mixture with pepper, salt, cinnamon and some finely chopped coriander. Bring 500 ml of water to the boil and dissolve the stock tablet in it. Pour 250 ml into the couscous and let it soak for 5 minutes, covered, and then stir well. Pour the couscous into the meat mixture. Fill the courgettes with the mixture from the pan and place them in a greased oven dish. Drizzle them with a little olive oil. Pour the other 250 ml stock into the baking dish so that the courgettes are slightly covered. Place the baking dish in the oven for 25 minutes.

Meanwhile, make the coriander sauce; Mix the yogurt with lemon juice and a pinch of salt and pepper. Finely chop the coriander and stir into the yogurt. Serve the courgettes with the fresh yoghurt sauce.
