Fresh summer salad with mango, tomatoes with honey mustard dressing and crispy chicken


4 breaded chicken cutlets
1 tbsp olive oil
200 g lettuce
250 g cherry tomatoes
1 large mango
1 red onion
4 tbsp parmesan cheese, grated
1 tbsp honey
1 tbsp mustard
2 tbsp olive oil
Pinch of black pepper
1 tbsp lemon juice


Mix all the dressing ingredients together. Half the tomatoes and cut the onion into rings. Peel the mango and cut into cubes. Heat a little olive oil in the pan and fry the chicken schnitzel for about 5 minutes on both sides. Mix the lettuce with the tomatoes, onion, mango and dressing and divide between 4 plates. Cut the chicken into pieces and divide evenly over the salad. Sprinkle with some cheese and serve immediately. Delicious with some bread or baked potatoes.
