Pumpkin casserole

Vegetarian casserole with pumpkin, apple and spinach under a layer of mashed potatoes and gratinated cheese

Ingredients

Bag of 450 gr pumpkin cubes (jumbo) or ½ pumpkin
800 gr potatoes, floury
1 tbsp olive oil
splash of milk
lump of butter
2 apples
300 gr spinach
2 red onions, in rings
50 gr grated cheese
125 gr goat cheese
Pepper and salt
½ teaspoon sage

Large oven dish 

Preparation

Bring a pan of water to the boil and cook the potatoes for about 15 minutes. Meanwhile, heat the oil in a pan and add the onions and pumpkin cubes. Add some sage and salt and pepper and fry them for about 15 minutes on a low to medium heat.  Heat the oven to 200 degrees.

Drain the potatoes and return them to the pan. Mash the potatoes and add a splash of milk, butter and some salt and pepper and mix well. Add the goat cheese pieces to the puree. Gradually add the spinach to the pumpkin and onions until it has wilted, then scoop into a large baking dish. Peel and dice the apples and add to the baking dish. Spoon the puree over the apples and smooth the top. Sprinkle with cheese and return to the oven for another 15 minutes until the cheese has melted.

Tip: if you still want to add meat to this dish, then fried bacon is recommended.
