2 pieces of pork tenderloin a 250 gr each
2 to 3 fresh truffles
3 slices of pata negra ham

Preheat the oven to 180 degrees. Cut the pork tenderloin into 3 pieces. Heat a little oil in a pan over high heat. Brown the pork tenderloin pieces on all sides for about 2 minutes. Remove them from the pan and cut the pork tenderloin horizontally just not all the way through. Sprinkle the inside with a little salt and pepper. Cut the pata negra slices in half and spread them over the inside of the pork tenderloin. Cut the truffle into thin slices and divide over the pata negra. Then sprinkle with a little saga. Close them and wrap them in a piece of aluminum foil. Place them in the oven for about 10 minutes. Then check whether the inside is nice and rosé.
This dish is nice as a tapas snack but can also be served as a main course. Then keep about 2 pieces per person.
