Ingredients

About 25 large pasta shells (Conchiglioni)
1 yellow bell pepper
1/2 zucchini
1 ball mozzarella
125 g goat cheese
1 tbsp olive oil
Salt and pepper,
1 teaspoon dried oregano
400 gr canned diced tomatoes

Preparation

Preheat the oven to 200 degrees. Wash the bell pepper and zucchini and cut them into coarse pieces. Grill them in a griddle pan over low heat for 20 minutes. Meanwhile, bring a pan of water with a pinch of salt to the boil and cook the pasta shells according to the package. Cut the grilled vegetables into small pieces and put them in a bowl and season with salt and pepper. Cut the goat cheese and mozzarella into small cubes as well and add to the vegetables together with a tablespoon of olive oil. Place the diced tomatoes in another bowl and season with salt, pepper and dried oregano. Divide the diced tomatoes over the bottom of an oven dish and place the pasta shells in the sauce.Fill them with the vegetable-cheese mixture and cover with a piece of aluminum foil and put in the oven for 12 minutes.
