2 courgettes
400 g pasta
200 g bacon cubes
250 g ricotta
3 eggs
60 gr walnuts
200 gr mushrooms
1 cup cherry tomatoes
fresh basil
1 dash of olive oil
1 clove garlic, finely chopped
Pepper and salt
50 g grated cheese

Heat the oven to 200 degrees. Cook the pasta according to the package, drain and add a small splash of olive oil to prevent it from sticking and store covered. Cut the zucchini into cubes and stew them together with the garlic and 2 tbsp water for 15 minutes until soft. Fry the mushrooms in another pan and keep them. Then fry the bacon strips in this pan until the moisture has disappeared. Roughly mash the zucchini with a pestle or fork. Stir the ricotta, eggs and zucchini puree together and add plenty of salt and pepper. Stir the mushrooms, a few basil leaves, bacon and walnuts into the ricotta mixture and then mix into the pasta. Place in a greased baking dish and divide the tomatoes in it.Sprinkle with the grated cheese and put in the oven for 20 minutes. Garnish with a few fresh basil leaves.
